My Perfect Banana Bread

I originally wasn’t planning on posting this banana bread recipe so i didn’t take step by step pictures (sorry). However, it turned out so BOMB DIGGITY  that i had to share it.  This is the banana bread recipe I have been searching for!  My Quest began over a year ago (see quest).  Im not sure the quest will ever officially be over because I love experimenting with new banana bread, but this is my new go to recipe.

Bonus points- its made with coconut oil and oatmeal!

The funny part- I was making it to get rid of left over ingredients in preparation for the move.

 My Perfect Banana Bread

Adapted by The Live in Kitchen

For the bread:

1 1/2 cup all-purpose flour

1 cup oatmeal

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

4 tablespoons coconut oil

1/2 cup firmly packed brown sugar

2 eggs

1 1/2 cups mashed ripe banana (about 3) – leave some chunks!

1/3 cup plain yogurt

1 teaspoon vanilla

1/2 cup roughly chopped walnuts

Preheat the oven to 350ºF. Coat a bundt pan with cooking spray and set aside.

In a medium bowl, whisk together all-purpose flour, oatmeal, baking soda, salt, and cinnamon. Set aside. In the bowl mix coconut oil and brown sugar on medium speed until well blended, about 1 minute. Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla. Add the dry ingredients- do not overmix.

Pour the batter into the prepared pan. Bake 40-45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes in the pan on a wire rack, then remove and cool completely on the wire rack.

Mom’s Banana Bread

I am revisiting my quest to find the best banana bread recipe .  Here is my mother’s recipe and currently my favorite banana bread.  A very simple and delicious recipe!


Ingredients

  • 2 cups flour
  • ½ tsp salt
  • 1/2tsp baking soda
  • 1 cup brown sugar
  • ½ cup melted butter
  • 2 eggs
  • 2-3 banana, mashed
  • ½ cup chopped walnuts

**Can add chocolate chips

Directions

Sift flour, salt and baking soda into larger mixer bowl.  Add sugar, melted butter, eggs, bananas and walnuts, mix thoroughly.  Pour into a well greased  bread pan (9”x 5” x 3”).  Let stand 20 minutes.  Bake in a 350 degree oven for 70 minutes. Remove from pan and let cool.

Wait till bananas are nice and ripe.Mash Bananas.

Banana Bread + Choco Chips

I realize this was supposed to mainly be a fashion blog… but lately I have been a better cooker than dresser.  Plus I have so many yummy recipes I want to share.

There is one thing you should know about me before you start reading my recipes and notice a common trend.  I LOVE bananas, always have.  I think it is their neutral taste.  Perfect for the morning.  Perfect for a snack.  Perfect for dessert when you are tricking yourself into thinking you are eating a huge mountain of ice cream and half of it is cut up bananas (I highly recommend trying this).  It is the perfect food.

So clearly one of a banana lovers favorite foods would be… banana bread

Therefore I am on a quest.  A quest to find the best banana bread recipe out there.  I usually make my mothers banana bread (recipe to come in the near future) but I decided I want to explore around… to make sure im not missing out on any amazing recipes!  The first recipe I tackled was from the lovely blog of SmittenKitchen

And what makes banana bread even more delicious?  Chocolate chips! I added a couple handfuls.

Ingredients

3 to 4 ripe bananas, smashed
1/3 cup melted salted butter
3/4 to 1 cup light brown sugar
1 egg, beaten
1 teaspoon vanilla
1 tablespoon bourbon (I did not use the burbon :( … but hey if you are feeling risky go for it!)
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
1 1/2 cup of flour
