My Perfect Banana Bread

May 8, 2013 by

I originally wasn’t planning on posting this banana bread recipe so i didn’t take step by step pictures (sorry). However, it turned out so BOMB DIGGITY  that i had to share it.  This is the banana bread recipe I have been searching for!  My Quest began over a year ago (see quest).  Im not sure the quest will ever officially be over because I love experimenting with new banana bread, but this is my new go to recipe.

Bonus points- its made with coconut oil and oatmeal!

The funny part- I was making it to get rid of left over ingredients in preparation for the move.

 My Perfect Banana Bread

Adapted by The Live in Kitchen

For the bread:

1 1/2 cup all-purpose flour

1 cup oatmeal

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

4 tablespoons coconut oil

1/2 cup firmly packed brown sugar

2 eggs

1 1/2 cups mashed ripe banana (about 3) – leave some chunks!

1/3 cup plain yogurt

1 teaspoon vanilla

1/2 cup roughly chopped walnuts

Preheat the oven to 350ºF. Coat a bundt pan with cooking spray and set aside.

In a medium bowl, whisk together all-purpose flour, oatmeal, baking soda, salt, and cinnamon. Set aside. In the bowl mix coconut oil and brown sugar on medium speed until well blended, about 1 minute. Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla. Add the dry ingredients- do not overmix.

Pour the batter into the prepared pan. Bake 40-45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes in the pan on a wire rack, then remove and cool completely on the wire rack.

Sweet Challah Bread

Dec 4, 2012 by

After my challah making disaster last year it was time to set my bread fears aside and try again.  With a fresh start I naturally turned to the internet and searched for a step by step video so I could follow the “look” of making Challah.  “How to make challah” from Howcast.com was my favorite and I followed it from beginning to end .

Looking back at my first attempt I was able to identify a few of the areas I went wrong in:

  • I didnt let my yeast rise enough- this round it was overflowing out of the bowl
  • My braid was two thick and the middle didn’t cook- I actually think my dough was meant for 2 loaves (embarrassing).  Tip: If the crust is getting brown two quickly make a tent for the loaf out of aluminum foil.

 Sweet Challah Bread
Adapted by Bon Appétit
Yield: 2 loaves

Ingredients
  • 1/2 cup plus 2/3 cup warm water
  • 2 tablespoons dry yeast
  • 1 tablespoons plus 3/4 cup sugar
  • 5 large eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon salt
  • 7 cups (about) all-purpose flour
  • 1 large egg yolk
  • 1 tablespoon water

Directions

Combine 1/2 cup warm water, yeast and 1 tablespoon sugar in large glass measuring cup and stir until yeast dissolves. Let yeast mixture stand at room temperature until foamy, about 10 minutes.

In large bowl of heavy-duty mixer fitted with whisk attachment, beat 5 eggs until blended. Add oil, salt and 3/4 cup sugar and beat until pale yellow and slightly thickened, about 4 minutes. Beat in 2/3 cup warm water. Add yeast mixture and beat until blended. Remove whisk and fit mixer with dough hook. Add enough flour 1 cup at a time to form smooth dough, beating well after each addition. Beat on medium speed until smooth and elastic, about 5 minutes, adding flour by tablespoonfuls if sticky. Turn out onto floured surface and knead 2 minutes.

Lightly oil large bowl. Add dough, turning to coat with oil. Cover with plastic wrap, then with clean kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.

Punch down dough. Cover with plastic and clean kitchen towel and let rise 30 minutes.

Grease 2 large baking sheets. Turn out dough onto lightly floured surface. Divide dough into 2 equal portions. Divide each portion into 3 equal pieces. Roll each piece into 9-inch-long rope. Braid 3 ropes together; pinch ends together to seal. Repeat with remaining dough pieces, forming 2 braids. Place each braid on baking sheet. Cover with towel . Let rise in warm area until almost doubled, about 30 minutes.

Preheat oven to 350°F. Whisk yolk with 1 tablespoon water to blend. Brush dough with egg mixture. Bake 10 minutes. Bake until bread is golden brown and sounds hollow when tapped on bottom, about 35 minutes. Transfer loaves to rack and cool completely.

Combine 1/2 cup warm water, yeast and 1 tablespoon sugar in large glass measuring cup and stir until yeast dissolves. Let yeast mixture stand at room temperature until foamy, about 10 minutes.

Beat 5 eggs until blended. Add oil, salt and 3/4 cup sugar and beat until pale yellow and slightly thickened. Add in 2/3 cup warm water.

Add yeast mixture and beat until blended.

Banana Bread + Choco Chips

Jul 31, 2011 by

I realize this was supposed to mainly be a fashion blog… but lately I have been a better cooker than dresser.  Plus I have so many yummy recipes I want to share.

There is one thing you should know about me before you start reading my recipes and notice a common trend.  I LOVE bananas, always have.  I think it is their neutral taste.  Perfect for the morning.  Perfect for a snack.  Perfect for dessert when you are tricking yourself into thinking you are eating a huge mountain of ice cream and half of it is cut up bananas (I highly recommend trying this).  It is the perfect food.

So clearly one of a banana lovers favorite foods would be… banana bread

Therefore I am on a quest.  A quest to find the best banana bread recipe out there.  I usually make my mothers banana bread (recipe to come in the near future) but I decided I want to explore around… to make sure im not missing out on any amazing recipes!  The first recipe I tackled was from the lovely blog of SmittenKitchen

And what makes banana bread even more delicious?  Chocolate chips! I added a couple handfuls.

Ingredients

3 to 4 ripe bananas, smashed
1/3 cup melted salted butter
3/4 to 1 cup light brown sugar
1 egg, beaten
1 teaspoon vanilla
1 tablespoon bourbon (I did not use the burbon :( … but hey if you are feeling risky go for it!)
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
1 1/2 cup of flour
