Jarlsberg Stuffed Mushrooms

Dec 30, 2011 by

Stuffed mushrooms are one of my favorite appetizers, and last weeks holiday party presented the perfect time to try a new recipe.  Jarlsberg is one of the main ingredients so I automatically loved them and gaging by how quickly they were eaten  I’d say the recipe was a success.

Jarlsberg Stuffed Mushrooms
Adapted from  Simply Scratch
Ingredients
  • 3/4 cup Italian-style dried bread crumbs
  • 1 cup grated jarlesberg cheese
  • 2-3 garlic cloves, peeled and minced
  • 3 tablespoons chopped fresh Italian parsley leaves
  • Salt and Freshly ground black pepper
  • 1/3 cup extra light olive oil
  • 2 -14oz containers of gourmet stuffing mushrooms
Directions
Preheat the oven to 400 degrees and drizzle about 1 tablespoon of olive oil on a  pan covered with aluminum foil.
MIx together the breadcrumbs, 3/4 cup of the Jarlesberg garlic, parsley, salt and pepper, and add 3-4 tablespoons of olive oil to the mixture and stir. Spoon filling evenly in each mushroom
and top with the remaining 1/4 cup Jarlsberg. Drizzle with remaining Olive oil and bake until golden, about 25 minutes.
Mix together Jarlsberg, garlic, olive oil, fresh parsley, salt and pepper.  I added a few chives for color.Wash mushrooms and pop stems off.

#1 Best Lasagna Recipe

Jul 17, 2011 by

As I start my first city job one of my goals is to make meals on the weekend that I can freeze to reheat for the week. The first freeze friendly meal I tackled was lasagna. Now I was a child raised on Stoffers lasagna so take my next few words as you will..  It was FANTASTIC!  I must confess when searching for a recipe this one stood out because… drum roll… it was called #1 Best Lasagna Recipe.  Trust me you will enjoy it as much as I did.

Sadly I was missing one ingredient, nutmeg.  This was the first time my new spice rack has failed me.  I have so much faith in it I didn’t even double-check the spices before I was off to the grocery store.  Honestly I couldn’t taste a difference without the nutmeg, once again this may be because I am not a lasagna expert.

If you don’t own a spice rack and you are still digging in the back of your cupboard (like my mother) you don’t know what you are missing.  Please for me go purchase one (please mother so I can stop digging when cooking at your house).  For some reason I was a little obsessed with finding the perfect spice rack and when I say a little obsessed I mean a lot.  Come to think of it im not sure why I was so concerned about this purchase, purchasing a TV was much easier.  I ended up purchasing the Olde Thompson 20 jar Flower Spice Rack and I love it!
